Kitchen porter at the Manor House in Oban

Espresso and a Berocca

What do you do to relax?

Listen to music; mostly the Who

St John's, but I am also very partial to a Greggs

The Manor House, where I started

What is your favourite food?

Classic French – anything slow-cooked

Which ingredient do you hate the most?

Foie gras

What flavour combinations do you detest?

Chilli and chocolate

Which person in catering have you most admired?

Fergus Henderson, the man is a genius

If not yourself, who would you rather have been?

Doctor Who

Which person gave you the greatest inspiration?

I take great inspiration from both Anthony Demetre and Bryn Williams – both of whom I was lucky enough to work for

If you had not gone into catering, where do you think you would be now?

A sparky, probably working with my brother

What is your favourite prepared product?

Big Tom tomato juice. I use it in so much

When and where was your last holiday?

Mallorca, over a year ago

TripAdvisor

Quadrophenia

I am a big fan of the Jack Reacher novels
