The Arctic char (Salvelinus alpinus) is a close relative of the salmon and the trout and can be used as a more sustainable alternative in recipes that call for these fish. Tasting like a delicate version of sea trout, the Arctic char is one of the most northerly freshwater species that is common around northern Europe.

M&J Seafood is sourcing its new Arctic char fillets from Iceland, where the fish is farmed successfully to provide year-round availability. The skin-on fillets are sized between 400g and 550g and sell for £9.80 per kilogram.
