Leith Chop House to open in Edinburgh next week

Compass Group directors Mark Fraser and Michael Spink will be opening Leith Chop House on Constitution Street in Edinburgh on 19 September.

Steak and cocktails will be at the centre of this venture by the company behind Edinburgh bar and restaurants Sygn, Montieths and the WestRoom.

The 40-cover restaurant will offer a casual dining experience based on the classic British steakhouse and will be open seven days a week.

The meat, which will be sourced locally, will be butchered in-house under the guidance of head chef Brian McConnachie. It will then be hung for 90 days in the restaurant's dry ageing fridges, which form a feature of the main room.

Spink said: "We wanted to go back to basics and create a classic British steakhouse where the ingredients take centre stage, so sourcing the very best beef is crucial for us at the Chop House."

Fraser added: "The Chop House has been an exciting project and we think it'll bring something really different to the shore.

"From sourcing the best beef to dry-aging and butchering it in house and cooking it over open coal, we're committed to serving the best steak in the city."

The restaurant will serve prime cuts of beef such as fillet, sirloin and rump with large sharing cuts such as chateaubriand and porterhouse also available. The menu will also feature nine starters including house-smoked salmon and lobster bisque and six main courses such as grilled lobster, dumplings and a house burger. Sundays will see a special menu to celebrate roast beef.

Drinks will include a cocktail menu, pale ale created to their own recipe and an extensive wine list.

The interior will feature copper, brass, herringbone tiles and leather banquette seating, along with the ‘Captain's Table' which will provide a secluded dining space for 10.

Fraser said: "The businesses we run are a real extension of who we are and what we love. In our twenties it was all about late nights and boozing and the bars reflected that. As you get older it's much more about great food and wine. Chop House will provide that."
