Lee Milne named new head chef at Celtic Manor resort
Gordon Ramsay trained chef Lee Milne has been appointed as head chef of the 2 AA Rosettes Owens restaurant at the Celtic Manor resort in South Wales.
Milne, who returns to Owens after six years in England, has built up his career at a number of Michelin-starred restaurants including Lords of the Manor in Gloucestershire, Ramsay's eponymous eaterie in Chelsea, The Vineyard at Stockcross and Sawyards in West Sussex.
Milne will aim to bring his own influences to the kitchen, describing his style of cooking as modern French/European, with a signature dish of roasted hand-dived scallops with black pudding, minted peas and caramelised cauliflower.
New dishes will include cured Welsh beef with quail eggs, truffle cream and a walnut and chervil dressing, and a light malt mousse with marshmallow, muscovado biscuit and white chocolate granite.
Milne said: "I'm very excited to be returning to Owens. It's a superb restaurant and I'm looking forward to building a kitchen and restaurant team that stands up to the restaurant's beautiful setting."
