Franck Pontais to open pop-up tasting bar at Harvey Nichols
Franck Pontais, winner of last year's Iron Chef UK, is to launch a pop-up tasting bar at London department store Harvey Nichols next month.
The Glass Kitchen, which forms part of the Knightsbridge-based store's ongoing Taste Lab project, will run for four weeks from 7 March and will comprise a 10-seat tasting bar at the Fifth Floor Foodmarket.
Pontais will be showcasing a variety of verrines served in Durobor-designed three-tier glass pyramids. Dishes will include light cauliflower flan with lentils and lardons, served with poached quails' eggs and a fine slice of smoked duck breast; and fresh pomegranate set in rose water jelly with white chocolate mousse and cherry confit, served with a demerara sugared tuille biscuit.
Pontais will also host two workshops on Wednesday 16 and 23 March, teaching customers to recreate the verrines. Places are £60 per person and can be booked by calling 020 7201 8689/8632.
Last year, acclaimed pastry chef Claire Clark, a two-time winner of the Craft Guild of Chefs' Pastry Chef of the Year award, ran a pop-up pâtisserie at Harvey Nichols for two months.
