Ex-Palomar chef Tomer Amedi to launch new Kensington restaurant

Tomer Amedi, former head chef and co-founder of the Palomar in London's Soho, is to oversee the opening of a new fire-focused Levantine restaurant in Kensington.

Pascor, opening today (20 June), will serve cocktails, wines by the glass and Levantine small plates. Using seasonal British produce, the menu will begin with ‘breaking bread' – samneh challah, whipped za'atar butter, smoked black tahini – with the rest split into ‘sea', ‘land' and ‘garden'.

Dishes will also include samneh butter scallops with charred leek cream, merguez gremolata and lemon balm; kombu-wrapped halibut with pickled kohlrabi, tarragon, chilli almonds; Egyptian duck breast salad with cucumber, pickled carrot, coriander and dukkah; and burnt aubergine with black tahini, pine nuts, pickled tomatoes, mint and capers.

Desserts will include a chocolate and tahini crémeux, made with milk and pistachio crumble and blueberry sauce, a reimagining of English crumble; and coconut ‘Beirut meets Bangkok' malabi with pineapple, kadaifi, basil and coriander seeds.

The cocktail menu will include the likes of Avi Bitter Lemon; and a White Turkish, using cardamom-infused vodka, Turkish coffee, cream and Kahlua, a twist on the White Russian. Wines have been curated by Amedi with a focus on Levantine productions.

Pascor will span two floors, seating 50 covers inside with a combination of booths and long sharing tables. Downstairs will have a large open kitchen and a small terrace with five tables, with an additional bar situated on the first floor.

Amedi said: "I'm so excited to bring some fantastic vibes, delicious food and exceptional wine by the glass to our fellow Kensengtonians, they deserve to have a fun place to go out to at a walking distance."

Pascor owner Tati Rurenko added: "Everybody needs to have their comfort place, where they know normal life can be put on pause for a few hours and life can be lived without a care in the world - somewhere where others will look after you, they will make you laugh, smile, feed you well and make sure you are having a great time. I love Tomer's approach and knew I wanted to work with him to recreate the same feeling for the people of Kensington and we're excited to welcome the guests and make them feel amazing."

Amedi was born and raised in Jerusalem and oversaw the opening of the Palomar in May 2014. In 2018, he returned to Israel to start his own venture, a restaurant and hotel consultancy for concept development. In 2021, he developed and launched Sabbaba restaurant at the Grand Hotel Montesol in Ibiza. As well as launching Pascor, Amedi is also set to launch Jane at the La Fonda hotel in Marbella, Spain.
