What was your first job?
My first job was with my dad. I helped him on his vineyard in Madeira

What do you normally have for breakfast?
I like a plain breakfast - a bowl of cereal or a bowl of porridge and some OJ
What do you do to relax?
I like to listen to music, or sometimes I'll go for a run. If I have a lot of spare time I'll try to go for a hike

I love Castle Terrace and 21212 in Edinburgh
What's your favourite hotel?
Belmond Reid's Palace in Madeira
What is your favourite drink?
A mojito on a hot summer's day
What is your favourite food/cuisine?
French and Japanese
What flavour combinations do you detest?
Chocolate and chilli
What do you always carry with you?
My notepad, so I can write ideas down when they pop into my head

Well-organised - I try to keep on top of the paperwork

Music and a notepad… and fishing gear!
If you had not gone into catering, where do you think you would be now?
I've not give it much thought, but… space! I'd be an astronaut
What irritates you most about the industry?
People that start work in kitchens, but don't actually want to work in catering
When did you last eat a hamburger?
I eat at least one a week
