Restaurant group and concessions business Peyton and Byrne has won a new multi-site concessions contract in Brighton worth £20m.

The seven-year deal to operate all restaurants, cafés and bars at Royal Pavilion & Museums and Brighton Dome will begin in March and Peyton Events, part of the group founded by restaurateur Oliver Peyton, will be sole event caterer across both sites.

The contract was awarded by the Royal Pavilion & Museums, part of Brighton & Hove City Council and Brighton Dome & Brighton Festival, which had both operated the food and hospitality services in-house.

The decision to seek a new supplier was made following a review carried out in 2011. Expressions of interested were received by 22 operators, of which nine were invited to pitch.

Each tender submission was evaluated on experience, capability, sustainability, price and quality, and bidders were also expected to portray how they would incorporate local suppliers and seasonal produce into their plans along with effective ways to manage waste, minimise packaging and reduce energy consumption.

In addition to meeting the tender requirements, Peyton and Byrne said it had impressed its new clients with its "innovative, creative ideas and strategies to improve the catering offer in Brighton's cultural quarter".

The focus will be on driving sales, attracting tourists and local residents, with the aim of providing high quality food that is locally sourced where possible.

Around £600,000 will be invested in the tea rooms, cafés and bars at the Royal Pavilion, Hove Museum, Brighton Museum & Art Gallery and Brighton Dome. The staged refurbishment project will be carried out over several months, starting in March.

Great British Menu judge Oliver Peyton commented: "I am delighted to be returning to Brighton, which we feel is the perfect location for our first out of London launch. We look forward to flying the flag for quality British food in this creative and dynamic area, alongside both Brighton Dome & Festival and the Royal Pavilion & Museum."
