Crusader's salmon by Gareth Johns


(serves one)

Salt, pepper, mace
175g fillet of salmon or sewin (sea trout)
Sprig of rosemary
2-3 slices of root ginger
Few slices of citrus fruit
Splash of dry white wine


Lightly season an 8in square of foil and add the rosemary and ginger. Place salmon on the foil and top with the citrus fruit, wine and more seasoning. Fold the foil into a parcel and bake in a hot oven for 10-12 minutes depending on the size and thickness of salmon.
