The Falcon stand offers plenty to see for conventional cooking, including a medium-duty series, a stainless steel update of the 650mm deep medium-duty Series 350 and a new oven to extend the light-duty Kestrel series. Also, expect a new Dominator six-burner range built to the EN203 European gas standard.

For chefs who want the kudos of a heavy-duty range that looks bespoke but is affordably off-the-peg, the Sovereign Suite, which Falcon unveiled last September, comes in seven standard gas range-oven configurations, at prices well below any bespoke suite: from ú5,850 for solid top and/or open burner top, plus griddle, chargrill and bain-marie options, on a general-purpose 36,000BTU per hour oven base.
