Hoshizaki UK has launched two blast chiller and freezer ranges, which slot into the Premier and Advance families. The blast freezers vary from 10kg to 60kg capacity and can cool food from +70°C to -18°C within four hours. The quick freezing results in smaller microcrystals, which are gentler on texture and less damaging than the large crystals caused by slower freezing methods. The Advance models can operate in ambient temperatures of up to +40 °C, while the Premier appliances can chill, freeze, retarder-prove and thaw.
