The five-AA-red-star hotel near Glasgow has also welcomed a new set of rooms following a £20m refurbishment
Crossbasket Castle near Glasgow has revealed further images of its new 40-bedroom hotel and restaurant overseen by chef Michel Roux.
Owners Alison and Steve Timoney invested £20m into the five-AA-red-star 14-acre estate in High Blantyre to create a 1920s art deco style.
The hotel has also welcomed Trocadero’s, an entertainment-led, opulently-designed restaurant from Michel Roux, which takes its inspiration from underground jazz clubs.
It is the second Roux restaurant to open at the hotel, with the culinary family working with Crossbasket Castle since 2016.
The Trocadero’s menu offers dishes such as Ayrshire pork chop, Trocadero’s seafood pie and banana soufflé alongside a selection of cocktails and a programme of live music.
Alison said: “Our new hotel and restaurant have been meticulously designed to create a place of pure escapism. When guests walk through the door, we want them to leave their world behind and journey back in time to a place where indulgence, glamour and sophistication were truly celebrated.
“The full concept of Trocadero’s, from the playful pours behind the bar and the indulgent delights from the kitchen, to the energy of the double bass that fills the room with live entertainment, our restaurant has been designed to create a space where champagne flows and anything goes.”
She added: “We had a very clear vision to create something entirely unique for the luxury market in Scotland. The final venue is truly extraordinary. It is a place where elegant vintage interiors seamlessly blend with the spontaneity and energy of live entertainment.”
A dedicated spa and two eco-lodges are also due to open later this year.
The Timoneys bought Crossbasket Castle in 2011, a year after it was listed on Scotland’s ‘Buildings At Risk’ Register.
They also restored the hotel in May 2016 and the property is currently managed by Inverlochy Castle Management International (ICMI).
