Christmas cocktail recipe: Dickens Punch

This sweet and spicy cocktail brings a Dickensian feel to this Christmas

Dickens Punch is served in the bar established in Charles Dickens’ old publishing house, Plume in Covent Garden, London.

 

This sweet and spicy cocktail was created by Andrew Gray, founder of Plume’s parent company, wine bar chain Fables & Company.

 

The zingy beverage combines two types of rum with citrus and tropical fruit for a full flavoured taste.

 

Ingredients

  • 35ml spiced rum
  • 25ml white rum
  • 50ml pineapple juice
  • 30ml orange juice
  • 20ml lime juice
  • 10ml gomme syrup

 

Method

Pour all ingredients into a shaker.

 

Dry shake (without ice) all the ingredients, then add the ice to wet shake.

 

Double strain over ice into a hiball glass.

 

Garnish with a dried orange and dried lime.
