The luxury Hilton hotel will feature two restaurants from world-renowned chefs Clare Smyth and Daniel Boulud
Waldorf Astoria London Admiralty Arch has unveiled the names of its two signature restaurants from chef partners Clare Smyth and Daniel Boulud.
The landmark development is set to welcome Coreus by Clare Smyth and Café Boulud by Daniel Boulud in 2026.
Fine dining restaurant Coreus is located in the former home of the First Sea Lord and will offer a seafood-forward menu that aligns with the hotel’s maritime heritage.
Smyth will also open her bar concept, Whiskey & Seaweed, which takes its name from a cocktail inspired by her signature dish, Potato and Roe.
She opened the first outpost of Whiskey & Seaweed at the three-Michelin-starred Core by Clare Smyth in 2023.
Earlier this month, Smyth announced plans to close Sydney restaurant Oncore by Clare Smyth next year.
She has, however, just launched Corenucopia by Clare Smyth in London’s Chelsea.
Meanwhile, all-day dining restaurant Café Boulud from New York-based French chef Boulud will offer everything from signature pastries and afternoon tea to lunch and dinner.
The café will be situated on the rooftop of Admiralty Arch and feature an open, south-facing terrace with views down the Mall and towards Buckingham Palace.
Boulud first opened Café Boulud, which holds a Michelin star, in New York in 1998.
The brand has since expanded across international destinations including Palm Beach in Florida, Toronto, the Bahamas and Riyadh.
The chef previously collaborated with Mandarin Oriental Hyde Park in London’s Knightsbridge to run Bar Boulud until its closure in 2020 following the expiration of its 10-year contract. Café Boulud marks his return to the London dining scene.
Boulud said: “I’m thrilled to be returning to London and bringing our Café Boulud dining experience to Waldorf Astoria London Admiralty Arch. I have worked around the world – from New York to Singapore – but London, to me, is one of the most exciting culinary cities in the world.
“I’m also delighted that we’ll be in such good company with Clare Smyth, for whom I have great admiration and have hosted in New York in the past. We can’t wait for guests to enjoy our all-day dining dishes on the rooftop of Admiralty Arch next year.”

The name Coreus combines Core, meaning ‘heart’ in many languages, whilst Us, symbolises unity and connection. Waldorf Astoria London Admiralty Arch will feature 100 rooms and suites and 17,500 sq ft of residences once it opens next year.
The Grade I-listed monument has been restored by Hilton and Reuben Brothers to also welcome two restaurants and a ballroom accommodating up to 300 guests.
Admiralty Arch was originally commissioned by King Edward VII in memory of Queen Victoria and was completed in 1912.
