The Chop House & Tavern brand was launched in September 2025 in partnership with Mike Reid, the former culinary director at Rare Restaurants
The Evolv Collection is to expand its newly launched Chop House & Tavern concept to Birmingham and New York this spring.
Stories Tavern in Birmingham will open on 27 April within the downstairs bar at 24 Stories (formerly Orelle), while Queens Tavern in New York’s Hudson Yards will open on 4 May, marking the brand’s US debut.
Stories Tavern takes inspiration from the 17th and 18th century drinking holes of Britain, complete with dark wood pallets, a deep red and blue colour scheme and brass detailing. It will also include an outdoor terrace.
Meanwhile, Queens Tavern at 20 Hudson Yards will offer a similar experience to the original Liverpool Street Chop House & Tavern, which was opened by the group in September 2025 in partnership with Mike Reid, the former culinary director at Rare Restaurants.
The Chop House & Tavern is said to honour Sir Terence Conran, who founded the hospitality group that the Evolv Collection is based on in 1991. The Tavern is also known for its signature £5 pints, which are available all day and include lager, IPA and Guinness.
At the time of the announcement, Evolv Collection said the concept will be rolled out across the group’s existing Butler’s Wharf and Paternoster Chop House locations, the latter of which has already opened in St Paul’s.

Richard Chiswell, general manager at 24 Stories, added: “We’re delighted that 24 Stories has been chosen as the latest destination in the Tavern family, giving our guests more reasons to come and visit us, whether it’s for an after-work drink or catchup in the Tavern, or joining us for a cocktail or dinner with a view upstairs in the restaurant.”
Since joining the group, which formerly operated as D&D London, Williams has been pursuing a strategy of developing key brands within the group, including Bluebird, Stories, Sartoria and Chophouse and Tavern.
The Evolv Collection operates sites across London, Manchester, Birmingham and New York.
