The group’s Butler’s Wharf and Paternoster Chop House locations will soon relaunch as the Chop House & Tavern
The Evolv Collection is set to launch a new chophouse brand featuring dishes from Mike Reid, the former culinary director at Rare Restaurants.
The Chop House & Tavern concept will launch on London’s Liverpool Street on 17 September before being rolled out across the group’s existing Butler’s Wharf and Paternoster Chop House locations.
The restaurant has been designed by brand historian Ron Cregan, who is known for his work on British heritage brands such as Mulberry and the Maybourne Group.
Liverpool Street Chop House & Tavern will serve as the benchmark for expansion. It will offer an 80-bin wine list, a cocktail menu “targeted at the city crowd”, and bar snacks such as Welsh rarebit, smoked haddock Scotch egg and cold roast beef sandwich.
The wider menu has been devised by Reid, who previously trained at Le Gavroche, Restaurant Gordon Ramsay and Melbourne’s Attica and Vue de monde. Dishes include lamb Barnsley chop with anchovy dressing, pigs’ head and roast chicken pie to share, and Pea Soope, which is based on a 1669 recipe.
Premium steaks, such as rib eye, fillet, sirloin and heart of rump, are sourced from the Ethical Butcher.
Liverpool Street Chop House & Tavern is said to honour Sir Terence Conran, who founded the hospitality group that the Evolv Collection is based on in 1991.

With origin stories and inspiration from the City of London’s liveries and first Tavern and Chophouse – all reimagined by renowned chef Mike Reid, the Evolv Collection team and I.”
Williams joined the Evolv Collection from Rare Restaurants, where he was chief executive for six years.
Evolv operates restaurants and hotels across London, Birmingham, Manchester and New York.
