Together, they explore how Clement is redefining the modern British pub by placing community, culture and inclusivity at the heart of everything he does and how SmartDispense® lets him focus on the things that matter.

The latest instalment of the series explores how landlords are changing the game, one pint at a time, and reshaping what pubs can mean to their communities. Taking Clement as an example – his approach is bold, contemporary and, above all, inclusive. At the heart of his pub model is a belief that everyone deserves to not only feel welcome but represented too – something he has been able to achieve with the support of HEINEKEN SmartDispense® technology across his venues, giving him valuable time back to be on the floor with his community.

Pubs for the people

From the moment Clement took on the Prince of Peckham in 2017, he set out to build something different. Rather than recreate a cookie-cutter pub concept, he focused on creating a genuine reflection of the area’s multicultural identity. It’s somewhere that’s more than just a pub – it’s a social hub, a celebration of local culture and a platform for diverse voices.

In the episode the trio discuss bringing different people and fresh faces into the pub sector, and how solutions such as HEINEKEN SmartDispense® can really help. Clement confesses to having not known much about managing a cellar when he got the keys to the Prince of Peckham, so turned to the SmartDispense® team for their expertise. The draught solution allowed Clement to focus on the elements of the business that would define his pub, creating an inclusive space and ‘making magic’, safe in the knowledge that SmartDispense® was taking care of the quality of the pints.

Redefining pub culture

Clement’s vision is grounded in experience – he’s familiar with the feeling of walking into a pub and not seeing yourself in the space, the staff or the offer.

In this episode, Clement, Jodie and Merlin also unpack how publicans are increasingly expected to be more than operators – they’re leaders, innovators and cultural curators. The role of the modern publican extends well beyond pouring pints. It’s about shaping safe, inclusive environments where customers and staff alike feel welcome and valued.

For fellow operators, it’s a call to action: not to just think about how pubs look, but about who they’re for, how they’re run and what they represent. Pubs that thrive are those that reflect their patrons, whilst remaining agile in a fast-changing sector. This is where HEINEKEN SmartDispense® can come in, alleviating bar teams from time consuming cellar management activity, so they can focus on spending time with customers and engaging with their communities.

Pouring to perfection

As with any successful hospitality model, the guest experience must be seamless from start to finish, and that includes product quality. In the episode, attention is given to the importance of serving consistently perfect pints, no matter what.

To support that level of quality and efficiency, Clement has the HEINEKEN SmartDispense® system in both of his pubs, and the technology has helped him pour pints which he’s never received a complaint for. HEINEKEN SmartDispense® is designed to simplify cellar management while elevating serve standards. It significantly reduces line cleaning and helps ensure beer is chilled precisely at the point of dispense, resulting in a consistently high-quality product, lower waste and significant time savings for teams.

For publicans HEINEKEN SmartDispense® offers a streamlined way to maintain quality across their draught beer and cider, reduce wastage and ensure their staff spend their time where it matters most, with their customers.
