Marco Montalbano first joined the Michelin-starred restaurant in 2022 as restaurant manager
Marco Montalbano will be leaving his role as general manager at the Michelin-starred Muse by Tom Aikens this July.
Montalbano moved to London from Sicily in 2017 and started his career in fine dining at La Chapelle by the Galvin brothers before moving to Hakkasan in Mayfair as assistant restaurant manager.
In 2022, he joined Muse as restaurant manager and swiftly moved up the ranks to general manager.
Chef patron Tom Aikens posted on Instagram: “I am sad to be losing such a fantastic GM, but also super happy for our wonderful GM Marco who will be relocating back to Italy with his wife at the end of July to embark on the next chapter of his life.”
Aikens added he is looking for a new general manager to join the team at the five-AA-rosette restaurant.
Last August, Muse by Tom Aikens gained a new head chef in the form of Aaron Harris, former sous chef at Pennyhill Park and Restaurant Story. He replaced Seamus Sam, who departed after five years at the Belgravia restaurant.
