The chef had previously worked with Gary Foulkes, who is overseeing the kitchen at Cornus, while at the Michelin-starred Angler in London’s Moorgate.
Kelly Cullen has joined Cornus in London’s Victoria as head pastry chef ahead of the restaurant opening this summer.
The team behind Medlar in London’s Chelsea announced the launch of Cornus, last month. It will be the first opening for the group in 13 years.
Gary Foulkes, who is overseeing the kitchen at Cornus, previously worked with Cullen at the Michelin-starred Angler in London’s Moorgate.
Cullen then went onto work at Claridge’s, Tom Brown’s Michelin-starred Cornerstone, which closed earlier this month, and most recently Allegra in London’s Stratford.
Announcing the news on Instagram, Foulkes said: “All desserts really need to be is delicious and deliver pleasure; Kelly gets this where most don’t and adds flawless technique along the way. Brilliant pastry chef; even better person.”
The 70-cover Cornus is expected to open in mid-July on the rooftop of Grosvenor’s Ice Factory at Eccleston Yards, a repurposed warehouse dating back to 1830.
