Yannick Alléno’s debut London restaurant at the Four Seasons Hotel Park Lane will be called Pavyllon London and showcase a British interpretation of the dishes that have made him one of the most decorated chefs in the world, it has been revealed.
The French chef already runs 14 restaurants across France, Monaco, Morocco, Dubai and Seoul which share 15 Michelin stars between them. This includes three at Alléno Paris, two at L'Abysse and one at Pavyllon, which are all located within the Pavillon Ledoyen building in Paris.
It has been announced that Alléno will bring his refined neighbourhood dining style to Pavyllon London, offering a British expression of his signature modern French dishes.
The menu will have its routes in French gastronomy, while showcasing the best of British produce and techniques developed by Alléno around extraction and fermentation.
Dishes will include aiguillette of sea bass with a celery extraction sauce and Pavyllon’s surf and turf, blue lobster and wagyu beef mille-feuille choron sauce beaten with toasted sesame oil.
The chef said: “Partnering with the iconic Four Seasons brand has always been a dream of mine, and I am so excited that this partnership will be conceived in London, where I have long wanted to open. “Together, we’ve created a concept that will reflect the contemporary and vibrant nature of the city it will call home, while appealing to locals, visitors, and all who enter its doors.”

The restaurant’s wine offering has been developed in partnership with sommelier Vincent Javaux.
Pavyllon London will open in early summer 2023.
