The five-AA-star Royal Garden hotel in Kensington will welcome four graduate chefs of the Craft Guild of Chefs into its kitchen to celebrate London Food Month.
Throughout June chefs, Andre Rhone, Connor Godfrey, Ruth Hansom and Victoria Scupham will take up residency in the hotel's Park Terrace restaurant.
Steve Munkley, executive chef of the Royal Garden, and founder of the Graduate Awards, will work with the graduates to offer diners four menus from £48 per person, or £65 with wine.
Andre Rhone, sous chef at the Bingham hotel in Richmond, will kick off the month on 8 June. He will cook a menu comprising turnips, pea custard and watercress; ackee and saltfish; lamb, yoghurt, aubergine and parsley; and sherry trifle.
On 13 June, Royal Garden hotel's junior sous chef Connor Godfrey, will take over the kitchen. He will serve textures of beetroot, nut crumble and rhubarb; langoustine, jersey royals and sea herbs; guinea fowl breast with fruits of the forest; and Pimms jelly with strawberries and mint.
The current Young National Chef of the Year Ruth Hansom, demi chef de partie at the Ritz London, will take residency on 22 June. She will cook a menu of roasted tartar of scallop with pickled kohlrabi, grapefruit and radish; veal sweetbread with walnut and black pudding crumb, caramelized endive, carrot, nectarine and almond; spiced gnocchi, shallot fondant, aubergine, goats curd and black garlic; and elderflower, gooseberry and champagne.
Victoria Scupham, finalist in Young National Chef of the Year, will be at the Royal Garden Hotel from 28 June. To start, diners can experience pork, apricot and pistachio terrine, followed by pan fried fillet of John Dory with a courgette and heritage tomato timbale, and finish with a strawberry Charlotte served with compressed strawberries, champagne jelly and lemon meringue droplets.
