Tom Griffiths's Flank has been named in the new food line-up for the Old Spitalfields Market revamp.
Opening on 13 October, 10 new food concepts including Flank, Breddos Tacos, Happy Endings and Rök will be opening in ‘the Kitchens' at the centre of the market, designed as fully functional kitchens to allow seven days a week trading.
Griffiths announced he would be opening his first bricks and mortar site in East London last month, having launched the concept as a pop-up in Brighton in 2015, focusing on nose-to-tail cooking.
The revamp and selection of the Kitchens traders has been overseen by Ten Ten, a creative organisation founded by chef Nuno Mendes and hospitality consultant Stephen Macintosh.
Mendes said: "We want to put Old Spitalfields Market back on the map as one of the most exciting and lauded destinations in London. It's a chance for us to bring Old Spitalfields Market into the modern day, and to celebrate all of the creative people and talent within this pocket of London."
The full line-up includes: Berber & Q, Breddos Tacos, Barbarian, Dumpling Shack, Flank, Happy Endings, Rök, Thousand Knives, Sood Family and Yum Bun.
The market floor will be further transformed over the coming months with new market stalls and a new line-up of small, independent and local traders, as well as a new events programme, all to be unveiled in spring 2018.
