Chef Tom Brown's first restaurant Cornerstone opens tomorrow in London's Hackney Wick.
Named after Brown's favourite Arctic Monkeys song, Brown was previously head chef at the Capital hotel in London's Knightsbridge and left last year to launch his first solo venture.
The menu will include dishes such as: ox tongue with salt cod, tomatoes and gremolata; pickled Porthilly oysters with celery, dill and horseradish cream; raw mackerel with lime pickle, coconut and coriander; and roast monkfish with spiced aubergine, basil and ginger dressing.
Originally from Cornwall, Brown worked for chef Nathan Outlaw for six years, starting at Outlaws at the St Enodoc hotel in Rock, Cornwall, before later moving to the Capital hotel in 2016, where he won a Michelin star.
Brown competed on BBC Two's 2017 Great British Menu and was awarded one of The Caterer's Acorn Awards last year.
