The Talbot hotel in Malton to relaunch next week

The Talbot hotel in Malton, North Yorkshire, is set to relaunch next week following a revamp by Sam and Georgie Pearman, the former owners of Cotswold hotel and restaurant group the Lucky Onion.

 

The 26-bedroom 17th century former hunting lodge and coaching inn will reopen on 4 February, following a one-month refurbishment.

 

It marks the first project for the Pearman's new consultancy business Country Creatures, which specialises in creating restaurants, inns and hotels that focus on great British hospitality.

 

Georgie, who designed all the Lucky Onion hotels and restaurants, has led the revamp of the riverside coaching inn. Key design features at the Talbot include oak floors and antiques in the 17th Century entrance hall, dark hues and textiles and lanterns in a snug, and a wood-panelled bar with vintage leather armchairs, accented with designer fabrics.

 

Newly appointed head chef Robert Brittain will oversee the 60-cover restaurant, and 24-seat private dining room. He has worked with Sam Pearman to create a series of menus that champion local produce.

 

Sample dishes from the a la carte menu include: double bone-in rib of Yorkshire shorthorn beef, hand cut chips, bone marrow, spinach and Yorkshire gravy designed for two to share; twice baked Dale End cheddar souffle, spinach and grain mustard; and Mrs Appleby's potato sea bake-smoked haddock and cod with tomatoes, mushrooms and parsley.

 

A section dedicated to seafood will feature daily catch from the nearby fishing town of Whitby, including crab, cockles and Fortune's hot smoked salmon.

 

Country Creatures has worked in collaboration with Tom Naylor-Leyland, whose family have owned the Talbot hotel for many years.

 

Naylor-Leyland has worked to establish the North Yorkshire town as the culinary capital of the north launching the Malton Food Lovers Festival, which is attended by 30,000 each year.
