La Lorraine Bakery Group has added Topped Flatbreads and Rustic Rolls to its bread range. The flatbreads are available in four variants: minced meat, pulled pork and pineapple, chicken kebab and veggie. The soft yet crispy dough is decorated with fingerprints to give it a handcrafted touch, and the breads are ready to bake straight from the freezer and can be served within minutes. Meanwhile the rolls come in three varieties – white, brown and multiseed – and they undergo a baking process which sees the dough naturally burst and crack for a rustic look. The rolls are part-baked, allowing caterers to bake off exactly what they need and avoid wastage.

Lantmännen Unibake’s Schulstad Bakery Solutions brand has launched Signature Fruit Danish Selection, a range which can transition Danish pastries into the dessert space. Featuring a square shape made with 24 layers of light, crisp and flaky Danish pastry, each pastry is dual filled, including a fruit compote featuring visible pieces of fruit to give a more artisan bakery look. Three flavours are available: morello cherry and almond Bakewell, apple and cinnamon custard Danish pastry square and rhubarb Madagascan vanilla custard and meringue. These combinations are inspired by the latest artisan bakery and dessert trends.

For venues wanting to offer sweet treats for vegan guests, Middleton Foods has introduced a Vegan Chocolate Cookie Mix to its portfolio. The readymade pre-mix uses a combination of ingredients including real cocoa so that operators only have to add water, mix and bake to create chocolate cookies. Available in a 3.5kg bag, each pack contains enough mix to make 87 cookies. These can be baked according to preference and demand: 9-11 minutes for soft, chewy cookies; or for crisp cookies, 13-15 minutes.

French bakery manufacturer, Bridor, has collaborated with German chocolatiers, Milka, to launch the new Swirl with Milka chocolate. The all-butter puff pastry swirl combines a light and flaky Viennese pastry and a smooth pastry cream, with Milka chocolate chips made from palm oil free, and 100% sustainable cocoa. Available in boxes of 66, the 95g pastries come frozen and ready to bake in 16-18 minutes at 165-170°C following a period of 35-45 minutes at room temperature. Bridor has also designed branded, recyclable greaseproof paper bags to accompany takeaway sales, as well as repositionable stickers to catch the eye of consumers.

Piglets Pantry has added a tear and share sausage roll to its latest pastry range. Suitable for those catering for groups, the sausage roll is cheese and chive flavoured and is topped with Parmesan crumb.
