Chef Björn Frantzén’s first UK restaurant in London’s Harrods department store is to finally open next month, with bookings available from 16 November.
Frantzén, whose restaurants Frantzén in Stockholm and Zén in Singapore both hold three Michelin stars, revealed plans for the site last year, with more details now confirmed ahead of the opening.
The 112-cover restaurant is described as a “neo-Nordic concept infused with Asian influences” and will offer an à la carte menu, with additional seating available on a mezzanine and terrace.
A Nordic-inspired drinks list will be served inside a bar and restaurant area that has been designed and built within Harrods’ top two floors. A rooftop terrace – the first to be custom built on the London landmark – will provide panoramic views across the city.
For starters, tartar of tuna and red deer, Vendace roe from Kalix, white kombu, wasabi infused cultured cream, fermented Mirabelle plum and warm ginger butter will be on offer, as well as Danish hiramasa sashimi with truffled dashi vinaigrette, served with preserved meyer lemon, green onions and black radishes.
On the main menu will be veal minute ‘ma-la’ made with fermented kampot pepper jus, Sichuan pepper oil, crispy shiso salad with ceps aioli and sake braised maitake.
Salad Bonito-Caesar will be a Japanese twist on the traditional Caesar salad, with more hearty options available such as the dish ‘Sweden vs Japan’ of braised Swedish dairy cow beef brisket served alongside grilled Japanese wagyu with lemongrass jus and Japanese mustard.
The dessert menu will include an ‘After Eight’ tart; and sticky toffee pudding with miso caramel, bourbon, sesame ice cream and candied pecans.
Frantzén said: “The UK was my home for a long time, and the experience that I gained here early on my career played an informative role in my education as a chef. I am overwhelmingly proud to be back in London, one of the most interesting cities in the world, to open my restaurant at Harrods.”
