Edson and Natalie Diaz-Fuentes's Mexican restaurant and bar Santo Remedio will open in early September on the former Magdalen site, at 152 Tooley Street, London Bridge.
The original restaurant opened in Shoreditch in early 2016, but despite good reviews was forced to close in August last year for unknown reasons.
The couple launched a Kickstarter crowdfunding campaign earlier this year to raise £40,000 to pay for the refurbishment of the new restaurant, and managed to raise £44,266 from 390 backers.
The new, larger 90-cover cantina and comedor will be set over two floors and has been designed by the pair to reflect their heritage.
The ground floor cantina, a traditional Mexican bar, will focus on tequila and mezcal cocktails alongside a range of tacos and snacks, including Santo Remedio's signature guacamole with grasshoppers.
The upstairs comedor, a traditional Mexican dining room, will serve tacos alongside regional Mexican specialties such as fish al pastor, gorditas de chicharron prensado, chiles rellenos, prawn aguachile rojo, short rib with mole negro, and plantain puree and pork chop with mole rosa.
Santo Remedio will be working with wine consultant Zeren Wilson of Bitten & Written on the wine list. Mexican wine from Baja California will be well represented and there will also be a frequently changing selection of wines from the rest of the world, kicking off with wines from California and Spain.
The couple have been working with Code Hospitality since last autumn, which led the fundraising for their new restaurant and invested in the business. They will continue to work actively with Code going forward.
Natalie Diaz-Fuentes said: "After so much love and support from everyone over the past year and throughout our Kickstarter campaign, we are incredibly excited that we will be throwing open the doors to our new cantina and comedor very soon and look forward to sharing the very best of Mexican food, drinks and hospitality with everyone who visits us."
