I have three Weimaraner dogs, so I take them for walks out on the hills in Perthshire

Thomas Keller – he has taken the food scene on a long journey and he promotes local suppliers

What irritates you most about the industry?
When developing younger chefs isn’t a focus. I believe more effort should be put into this in every business
