The Lanesborough in London – I’ve had a soft spot for it ever since I worked there

A crisp, cold glass of Riesling

Thai
Which ingredient do you hate the most?
Coffee – just not for me, I’m afraid
Are there any foods/ingredients that you refuse to cook with?
Buckwheat – I’m allergic to it!
What do you always carry with you?
My Epipen – in case of accidental buckwheat
Which person in catering have you most admired?
Ferran Adrià. What he has done for the industry is massive. It changed everything – the way we look at food, create it and present it. Genius
Which person gave you the greatest inspiration?
My parents, they’ve always been very supportive and pushed me to do my best
Cast away on a desert island, what luxury would you take?
A record player – life without music would be horrible

Sky Sports, to check up on Arsenal
If you had not gone into catering, where do you think you would be now?
A food critic or a food inspector – anything involving food really
When and where was your last holiday?
Vienna, last December, with my girlfriend and some friends for the Christmas markets. It was a great break

No shows –whether that’s customers or applicants for job interviews

In January by the beach. It was a beautiful sunny winter’s day, down at St Ouen’s, arguably Jersey’s best beach
