Minnow to open in London's Clapham Common in July

Neighbourhood restaurant Minnow is set to open in London's Clapham Common next month, founded by the son of the former owners of Knockinaam Lodge in Scotland and his fiancée.

 

Chris Frichot and Saba Tsegaye will be joined in the kitchen by Jake Boyce, former head chef of Jason Atherton's Social Wine and Tapas.

 

Frichot grew up at Knockinaam Lodge in Scotland, and has worked in the industry at Caravan, Hawksmoor and Hoi Polloi.

 

He will run the new venture with help from Tsegaye.

 

minnow-2Boyce's cooking will offer a twist on modern European fare, influenced by the British seasons, whilst giving a nod to the flavours of the Indian Ocean, where founder Frichot’s family hail from.

 

Dishes will include: squid with lemongrass, lime and ginger; baby octopus with curry leaf paste and charred green mango, whole roast poussin from Minnow’s Robata grill, and caramelised watermelon with a blood orange and Campari sorbet.

 

The restaurant will be open for breakfast, lunch and dinner, serving brunch at weekends.

 

Set across two floors, the ground floor will feature a marble bar looking out over the Common where granitas (soft and hard) will be served in the summer. A hand tiled monochrome mosaic floor will lead to a walled garden for outdoor dining and a downstairs dining room with an open kitchen.

 

Frichot and Tsegaye, who was born in the US and has a father from Ethiopia and a mother from Sierra Leone, met at Nottingham University. Both have been involved in developing the concept of the restaurant from the start.
