Maya and crowdfunded restaurant Cuubo among new Michelin Guide additions

Michelin provides monthly updates on its selections based on its inspectors’ travels around the country.

Seven new restaurants, including Maya in Manchester and crowdfunded Birmingham restaurant Cuubo, have been added to the Michelin Guide Great Britain and Ireland’s selection this month.

 

The red book updates its recommendations monthly based on its inspectors’ travels, with any additions highlighted by a ‘New’ symbol.

 

It will not be confirmed if the restaurants will receive a star, Bib Gourmand, or any other awards until the next formal Michelin Guide ceremony.

 

Cuubo was opened in Harborne, Birmingham by former Simpsons chef Dan Sweet earlier this year following a crowdfunding campaign.

 

It seats just 20 covers and offers a £75 tasting menu and £50 three-course dinner. The restaurant recently received a rave review from Jay Rayner in the Observer and was praised by Michelin for its cooking that lacked “unnecessary frippery”.

 

Maya (pictured) in Manchester occupies the basement of a building which was once home to the celebrity favourite Mash and Air nightclub. The kitchen is led by Mancunian chef Gabe Lea, and Michelin said his classically-based cooking was "sure to be a hit".

 

Other new additions included Boheme in Chester, which was launched by best friends Ben Iles and chef de patron Andi Lowe-Smith just three months ago.

 

It operates as a café and bakery in the morning before offering an evening menu, which Michelin praised for its “well executed and satisfying dishes”.

 

The guide also praised Nord in Liverpool, which is led by Daniel Heffy, former head chef at Michelin-starred Adam/Albin in Stockholm. The restaurant is run by northern group GSG Hospitality, which has a portfolio across Manchester and Liverpool.

 

There was also recognition for neighbourhood restaurant Sune on the canal in London’s Hackney, which offers around 14 sharing plates, as well as family-run Thirteen in Poole.

 

The Duck on the Pond pub in South Newington was recommended by Michelin for the “unfussy honesty” in its dishes, which make use of produce sourced from the team’s own small holding.
