Mark Poynton and Adam Smith among chefs cooking for Murray Chapman’s charity dinner

The evening will be held at Caistor Hall in Norwich to raise funds for Chapman, who was diagnosed with Motor Neurone Disease in May.

Five chefs, including the likes of Mark Poynton and Adam Smith, will be cooking at a charity dinner in support of Murray Chapman, who was diagnosed with Motor Neurone Disease (MND) earlier this year.

 

The four-course dinner will take place from 6.30pm on 17 September at Caistor Hall in Norwich from chefs Eric Snaith of Titchwell Manor; Russell Bateman of the Falcon Castle Ashby; Sam Carter of Restaurant 22 Cambridge; Adam Smith of Woven and Coworth Park; and Mark Poynton of Mark Poynton at Caistor Hall.

 

Dishes will include leek, seaweed, egg yolk and truffle; dry aged trout potato, horseradish, sudachi, cucumber and Golden Oscietra caviar; Dingley Dell pork celeriac, miso and black walnut; and russet apple, brown butter, bay leaf and blackberry.

 

Chapman, a former chef and Education and Training Catey Award winner, has been a firm advocate of the industry, having founded non-profit initiative A Passion to Inspire in 2009 to train and mentor culinary students.  

 

Over the years, he has raised over £240,000 for charities such as Teenage Cancer Trust and Hospitality Action.

 

Chapman is also a Craft Guild of Chefs Master Craftsman, a member of the Master Chefs of Great Britain, and Disciple Escoffier.

 

A fundraising campaign was launched in June to enable Murray and his family to pay for essential equipment following his MND diagnosis, which has since raised over £13,000.
