Ian Doyle has been appointed head chef of hotel and restaurant Grays Court and the Bow Room in York.
He has replaced Adam Jackson, who joined the 12-room hotel in May 2021 as head chef.
Doyle was previously head chef at the House at Cliff House Hotel in Waterford, Ireland, where he was awarded a Michelin star in 2021.
He moved to Yorkshire from Ireland a little over a year ago and has been at Grays Court for the past six weeks.
Doyle has been working with the head gardener of the hotel to plan produce for the edible garden and test dishes for his upcoming tasting menu.
Commenting on his appointment, he said: “I’m thrilled to have been given this opportunity to work in such an iconic hotel and restaurant. The exclusive nature and outstanding reputation of the business provide me with the perfect springboard to establish myself in England and Yorkshire.”
Helen Heraty, Grays Court proprietor, added: “We are delighted to have Ian on board. His reputation speaks for itself, and we are confident that he and his team will be able to enhance our reputation as the best place in York to eat, drink and sleep. We are all very excited about Ian’s creativity, professionalism and skill and we are looking forward to what lies ahead.”
