Former Gordon Ramsay front of house staff to open Buckinghamshire pub

Daniel Crump and Margriet Vandezande-Crump are relaunching Italian restaurant Greyhound Enoteca in Beaconsfield as the Greyhound pub and restaurant this December.

 

Margriet previously worked as an assistant restaurant manager at Michelin-starred restaurants including Adam Byatt’s Trinity in London’s Clapham and Ramsay’s Pétrus in Knightsbridge; while Daniel worked as a head waiter at the three-Michelin-starred Restaurant Gordon Ramsay in Chelsea.

 

Both spent the last four years at Steven Ellis’ Oxford Blue pub in Windsor following Ellis’ departure from the sous chef role at Ramsay’s Chelsea restaurant; Daniel as general manager and Margriet as restaurant manager.

 

The Greyhound, located in a Grade II-listed old coaching inn, will serve modern British cuisine and beers and ales from local breweries, with a head chef appointment to be announced shortly. The 17th century building is currently undergoing a sensitive refurbishment overseen by designer Ian Brice.

 

Daniel said: “We are really excited about our new venture. We have both had amazing careers to date and have worked with some incredible people over the years. We are looking forward to bringing the best of what we’ve picked up to our own place.”

 

Margriet added: “We are so pleased to be launching the Greyhound. We’re hoping the pub and restaurant will give people a place they can come to enjoy themselves and be comfortable, whether it’s for a delicious meal or for a quick drink. That’s why we have developed menus which give people lots of food options, as well as a wine list which is accessible to all.”
