Chef Graeme Cheevers to open Glasgow restaurant Unalome

Chef Graeme Cheevers is to open his first solo restaurant, named Unalome, in Glasgow in February 2021.

 

The site, which replaces the Sisters restaurant in Finnieston, will receive a £350,000 investment and is expected to create 50 jobs.

 

It will seat 60 covers and open for lunch and dinner seven days a week, serving a weekly-changing modern European menu.

 

Cheevers was head chef at the Isle of Eriska hotel from 2018-2020, during which time it was awarded a Michelin star. He previously headed up the kitchen at Martin Wishart at Loch Lomond, where he maintained its one-star rating.

 

He has similar ambitions for Unalome, and hopes it can win Glasgow its first Michelin star in almost two decades.

 

The city has been without the award since Gordon Ramsay’s Amaryllis at the One Devonshire Gardens hotel closed in 2004. Chef Andrew Fairlie won a star while head chef at the same hotel in 1994.

 

Cheevers said: ”It is scary going solo, but I feel like I’m now at a point in my career where I’m ready and I have the confidence and experience to take it forward and make it a success.

 

“Unalome will be a dining experience unlike anything else you’ll find in the city. But, it will also be accessible and relaxed so that everyone can come and enjoy it. I don’t want it to be an occasion restaurant – I want people to visit again and again and experience something slightly different every time.

 

“We’re hitting the ground running and have high hopes to achieve Glasgow’s first Michelin star since 2004 within our first year. To follow the successes of Andrew Fairlie or Gordon Ramsay in Glasgow would be incredible. I can’t wait to get started.”
