Former Perilla chef to open restaurant at Graduate hotel Cambridge

Chef Adam Wood, formerly of London restaurant Perilla, has partnered with White Rabbit Projects to launch a restaurant at the upcoming Graduate hotel in Cambridge.

 

The restaurant, named Garden House, will open within the hotel, which is set on the banks of the River Cam, in July.

 

The hotel, formerly the Doubletree by Hilton Cambridge City Centre, is among the first two Graduate hotels to launch in the UK.

 

It will also feature a Garden Bar (pictured), café and co-working spaces developed by White Rabbit Projects. The restaurant investment and advisory service, founded by former Soho House commercial director Chris Miller, has also backed the growth of Kricket, Lina Stores and Island Poke.

 

Wood’s menu will focus on open-flame cooking with dishes to include grilled Norfolk quail, pickled cherry and dandelion; and herdwick hogget, roasted peppers and kelp sauce.

 

The café and flexible work space will serve more casual dishes from breakfast through to dinner, including burgers, salads, fresh bread and pasties.

 

White Rabbit Projects is also creating the food and beverage offering at the Graduate Hotel in Oxford, which is set to open this summer.

 

Graduate Hotels was launched in 2014 and has 28 hotels in university-anchored towns in the US, with eight further properties set to open by the end of 2022.
