A former Viajante, Lyle's and Koya chef is to open a new restaurant in London Bridge this November.
The restaurant will consist of two dining spaces, a 70-cover a la carte restaurant open for lunch and dinner and a 30-cover wine bar.
The menu will use produce sourced from the UK and Portugal. Dishes include: Clams Bulhão Pato with coriander; octopus with red pepper miso; fermented potato with egg yolk and mustard; beef Maronesa; mackerel with savoy cabbage and smoked seaweed butter; grilled soaked brioche with sour caramel and hazelnuts; and Requeijão with lemon curd, malt and vanilla waffle.
Carreira said: âThere will be a nod to Portugal on our menus, but I donât want the creative process to end there. Both the restaurant and wine bar menus will evolve each week and will reflect the many influences of our culinary experiences.â
Portugal-born chef Carreira started his career at Andoni Luis Adurizâs Mugaritz in Gipuzkoa, Spain, before moving to London and working at Nuno Mendesâ Viajante as head chef , followed by Lyle's in Shoreditch and Koya, Soho.
