Music industry chef Sam Letteri who has worked with stars such as Take That, Rihanna and Depeche Mode, is to launch a sushi restaurant in Oakham, Rutland.
Fish Tank Sushi is due to open on Friday (1 September).
Sam co-owns the restaurant with wife Romy, who worked as a dressing room co-ordinator.
Vegetarian and vegan options include crispy tofu and kimchi roll; roast red pepper maki; and spicy wild rice parcels. While pescetarians can enjoy salmon and avocado rolls; prawn nigiri; and yuzu salmon parcels.
Meat sushi items include chicken katsu rolls; crispy duck rolls; and beef fillet and wasabi nigiri.
Non-sushi dishes will be available too, such as slow-cooked pork and ramen noodle soup; tempura soft shell crab with spicy chilli mayo; and chicken yakitori skewers with shredded vegetables and dip.
It will also serve fresh juices such as pineapple, cashew and avocado; and cucumber, spinach, ginger, lime, apple and blueberry.
With logo design from So Brand Creative based in Stamford, customised aprons from Aroha Beauty House in Uppingham, and coffee from Two Chimps Coffee in Oakham, the Letteris are also keen to support local businesses.
Sam has been hosting tastings prior to the opening, including a demonstration at Rutland Cookery School on 29 July. Fish Tank Sushi catered for acts at Radio Oneâs Big Weekend 2017.
