David Brown has been appointed executive head chef of village pub and restaurant the Crown at Ampney Brook in Cirencester.
The Crown is owned by the Wild Thyme & Honey Hotel, the 24-bedroom property located next door, which opened in December 2021.
Brown has over 15 years’ experience in the industry and joins from the two-AA-rosette Lewtrenchard Manor in Devon, where he was head chef.
His menu at the Crown is described as a farm-to-table modern British offering, which will showcase high-quality, seasonal local produce.
Brown said: “I am incredibly excited to join the brigade at Wild Thyme & Honey and put everything I’ve learnt from my career into the executive head chef role.
"Our venue is stunning and it’s imperative the quality of food remains an extension of the beautiful surroundings. My objective is to maintain and further its reputation as a gastronomic destination, where every guest has an amazing experience from the moment they walk through the doors until they leave.”
Drew Brown, managing director at Grosvenor Pubs and Inns, said: “David’s ambition, passion for the hospitality industry and extensive experience are evident as soon as you meet him, and we are confident he will be a positive and inspiring leader in the kitchen.”
Wild Thyme and Honey is owned by Red Lion Holdings (RLH), a specialist hospitality investment group that also owns and operates the Cricketers on the Green in Surrey; the Hare & Hounds in Newbury; and the Kings Arms in Egham.
