Spanish Michelin-starred chef Dani García to open tapas restaurant at Mondrian Shoreditch

Details of the food concept and design of the 120-bedroom Mondrian Shoreditch hotel, which is set to open in July following a rebranding and major transformation, have been announced.

 

Three-Michelin-starred chef Dani García from Andalucia in Spain will oversee the new tapas restaurant Bibo (pictured), replacing Red Rooster, which was operated by US-based chef Marcus Samuelsson.

 

“It is an honour to open our first UK-based restaurant and we are excited to establish the property as the heart of the Shoreditch food scene,” said García. “I have always been fascinated by the vibrant energy of London and look forward to welcoming guests to our restaurant in the Mondrian hotel, which is sure to become a true icon in the district of Shoreditch.”

 

There will also be a new all-day café and cocktail bar, Christina’s Shoreditch, which will focus on products sourced from local independent suppliers, start-ups and brands with social impact.

Meanwhile, guests will have access to the Altitude Rooftop for breakfast, which will otherwise be exclusively for use by members of the Curtain, the hotel’s long-standing private members club. Members will also be able to use the Design Studio, a co-working space on the ground floor.

 

The hotel’s design is being undertaken by Goddard Littlefair, the company that has previously worked with Gleneagles in Auchterarder and the Lowry hotel in Manchester. The upbeat look of the Mondrian brand is reflected in a large-scale artwork painted on concrete in the double-height ground-floor bar and the white brick walls of the bedrooms.

 

Mondrian Shoreditch opened as the Curtain hotel in 2017 by New York hotelier Michael Achenbaum, founder of the Gansevoort Hotel Group. Its operating company AL Curtain Tenant and Curtain Management Holdings, fell into liquidation last year following the sale of the freehold to the Reuben Brothers in 2018.

 

A new operating agreement between Reuben Brothers, Accor and SBE was revealed in October 2020, with the announcement that hotel would become the sixth hotel for the Mondrian brand and the flagship for Europe. Mondrian previously had a presence in London as the moniker of the 359-bedroom Sea Containers London hotel, which ended its management agreement with SBE in 2019 and is now managed as an independent property by Lore Group.

 

The opening of Mondrian Shoreditch will be followed by two launches for the brand next year in France in Bordeaux and Cannes.
