Trystan-Ross and Daisy Pooley-Tolkien-Williams are taking over the pub and brewery from the late Pete Elvin, who owned the site for 24 years.
Chef Trystan-Ross Pooley-Tolkien-Williams and his wife Daisy have launched a crowdfunding campaign to continue the legacy of the Star Inn and Penzance Brewing Company in Cornwall.
The pair have raised more than £6,000 out of a £60,000 target, which will support the fit-out of a new kitchen serving simple dishes and themed menus such as fish Fridays and Sunday roasts.
Donors can receive meal vouchers, private dining reservations and design their own beer experiences.
The Star Inn was previously owned by the late Pete Elvin, who purchased the site with his partner in 1999. In 2009 he bought the Penzance Brewing Company.
The Pooley-Tolkien-Williams are the new owners of the pub and the first to take it over since the death of Elvin in late 2023.
Trystan spent a decade working in the Michelin-starred kitchens of Angela Hartnett, Nieves Barragán, Gary Foulkes and Sat Bains, while Daisy also has hospitality experience from working at Hand Bar, one of Cornwall’s specialty beer bars.

We understand how much this brewery and pub means to the local community, and we are committed to maintaining its heart and soul, whilst also bringing in fresh ideas to help it grow and thrive.”
