Chef Regis Crepy to open a flammekueche restaurant in Cambridge

A new fast-casual dining restaurant specialising in a bread-based snack from the Alsace region is to open in Cambridge in August.

 

Amélie, which is being launched by chef-restaurateur Regis Crepy and his son Alex, will serve a short menu featuring flammekueche as its focus.

 

Fammekueche is a light, thin bread dough, spread with crème fraîche and traditionally topped with bacon and onions. Traditionally cooked in a very hot oven to create a crisp and charred edge, the dish is often shared between customers.

 

A choice of six tapas-style starters such as cauliflower roasted in paprika, served with spicy mayonnaise, and sardines with coriander and preserved lemon on sourdough, will be followed by flammekueche (from £5.95) offered with a choice of toppings. They include salmon with avocado, capers, courgettes, tomatoes and dill; smoked belly pork with chilli and pickled gherkins; Parma ham with Parmesan and rocket; beetroot, poached pear, spinach and goats' cheese.

 

Desserts will include poached pear with chocolate, roasted almond, meringue and ice-cream or apple compote with ice-cream and Armagnac cream.

 

Regis and his wife Martine previously ran the three-AA-rosette Great House restaurant with five bedrooms in Lavenham, Suffolk, for 32 years. The property was sold after being put on the market last year with a guide price of £1.38m.
