Boutique vegan hotel to open in Perthshire

A boutique vegan hotel dedicated to "showcasing ethical luxury" will open in Perthshire, next month.

Due to launch on 15 June, Saorsa 1875 (formerly the Birchwood hotel) will have 11 bedrooms individually decorated with "bohemian" styling and antique furnishings. The baronial property overlooking Pitlochry was built in 1875.

The name Saorsa comes from the Scottish-Gaelic word for freedom or liberty. The hotel is entirely free from animal products including non-toxic and non-animal-tested cleaning products from Method and vegan toiletries, and is powered by green energy company Ecotricity. The minibars will be stocked with locally-sourced, vegan treats.

As well as two acres of natural woodlands and gardens, the hotel will feature a lounge and restaurant serving a plant-based menu showcasing local, seasonal and foraged produce, and a drinks list of local beers, wines and cocktails inspired by the region.

Jack McLaren-Stewart, who previously worked in social media marketing and is managing director of online music magazine Bad Luck, owns the property with his parents Sandra and John (who are all vegan). He and his family plan to expand the brand through additional hotel in the future.

The hotel will be partnering with vegan chefs from all over the country for dining experiences and will also offer cooking classes, outdoor adventures and health and wellness retreats.
