Adam Maddock leaves head chef role at the Fife Arms

Adam Maddock has left his role as head chef at the Fife Arms in Braemar, Aberdeenshire after just under a year.

The chef joined the boutique hotel last March and oversaw menus across its restaurants and bars, including wood-fired cooking venue Clunie Dining Room and the Flying Stag pub.

Writing in a post on Instagram, Maddock said: “The time has come for me to part ways with the Fife Arms. I would like to thank the Wirths for the opportunity to be part of their hotel. Thank you to the team that made it happen every day from the porters to the kitchen team. I wish the Fife and the wider company all the best.”

Maddock worked with Michael Caines at Gidleigh Park in Chagford and at Whatley Manor in Malmesbury under Martin Burge and Niall Keating. He later cooked at Driftwood hotel in Truro and took the restaurant from three to four AA rosettes.

The chef said he planned to spend time with his family, and work on plans for the future after leaving the Fife Arms.

The Fife Arms was founded in 2018 as part of the Artfarm portfolio, which is owned by Iwan and Manuela Wirth.
