Jason Atherton’s hotly anticipated return to Grosvenor Square with the Betterment restaurant at the relaunched Biltmore hotel is set for 19 September.
Atherton will oversee all of the food & beverage at the 308-bedroom Mayfair hotel, including the Betterment restaurant, the Terrace, the Tea Lounge and the Pine Bar, as well as room service and events.
Paul Walsh, who launched and led Atherton’s City Social restaurant for five years, achieving a Michelin star within seven months of its opening, will take the helm of the new restaurant.
As head chef, he will oversee a seasonally driven restaurant menu featuring wood-fired fish and meats, fresh seafood, signature salads and plant-based plates.
The launch of the restaurant will mark a return to the prestigious postcode for Atherton, who rose to prominence while launching Maze for the Gordon Ramsay Group at the London Marriott hotel in 2005.
The Biltmore will open following its £60m redevelopment from the Millennium Hotel London Mayfair and operate under Hilton’s luxury LXR Hotels & Resorts brand.
When Atherton’s return to Grosvenor Square was announced, he said it was “incredibly exciting” to be working on the launch of the hotel and an “opportunity we couldn’t let pass”.
