Roy Brett is partnering with his fish supplier to open a new restaurant at Edinburgh's Newhaven Harbour next month.
The Ondine chef-patron is working with long time supplier and friend Gary Welch who runs his wholesale and retail fish operation from the harbour.
Brett is opening the 50-cover Fishmarket restaurant next month serving fish and chips along with a selection of shellfish including local lobster, langoustine, scallop and crab inside the working fish market.
He told The Caterer: "Gary and I have been talking for ages about doing something together, so this is great. We're partners right down the middle. Gary will be supplying the product and I'll be running the restaurant.
"The fish will arrive on the harbour and be processed next door by Welch Fishmongers before coming straight to us, so it's pretty special."
The menu will feature fish and chips, shellfish and oysters served from a 12-seat oyster bar. Fishmarket will also serve takeaway options.
The kitchen will be run by Ishu Mehrotra (pictured, left), who is currently Ondine head chef.
Brett added: "I'll be going down every day but will be cooking in Ondine on a daily basis. It'll give Ishu room to grow, having had nine years at Ondine.
âWeâve been asked a few times whether we wanted to do another Ondine, but we didnât want to do another one. This venture is satisfying for us as it has a different style.â
