Fried chicken and craft beer restaurant Bird is to open a fourth site in Westfield Stratford City shopping centre in east London later this year.
Bird is run by two Canadians, former Credit Suisse investment banker Paul Hemings and his wife, chef Cara Ceppetelli (pictured below). It launched in Shoreditch, east London, in 2014, serving 100% free-range chicken from a single British farm. It now has additional sites in Islington and Camden.
The new Bird will open on the first-floor food court area on the former Chip + Fish stall site, joining brands such as Franco Manca, Tossed and Pho.
Hemings said: "It's a really exciting step for us. We've got nothing else planned specifically beyond this, we want to focus on the ones we've got, but Westfield's a nice step for us to take."
The restaurant added a fried chicken doughnut to its menu in June, involving fried chicken, melted cheese and rashers of streaky bacon sandwiched between a sugary glazed doughnut, which will be served all summer.
