According to the guide, green-starred restaurants are at “the forefront of the industry when it comes to their sustainable practices”. The red book said the selected restaurants offer dining experiences “that combine culinary excellence with outstanding eco-friendly commitments”.
Any restaurant in the guide is eligible for a green star, which were first awarded in 2020.
This year, the stars were presented at the Kelvingrove Art Gallery & Museum in Glasgow, the first time the red book has held its ceremony in Scotland.
