Jun Tanaka, chef-owner of the Michelin-starred Ninth restaurant in London’s Charlotte Street, is opening a restaurant in Hong Kong.
The Mediterranean-inspired venue, called Salisterra, is set to launch on the top floor of the 117-bedroom Upper House hotel in mid-April. It has been designed by architect, André Fu, who designed the hotel itself.
The menu will draw inspiration from the coastal cuisines of France and Italy, and has been named after the Latin words ‘salis’ for salt and ‘terra’ for earth.
Due to travel restrictions, Tanaka has been leading the opening from London through Zoom calls and training videos.
Tanaka opened the Ninth, his first solo venture, with schoolfriend and business partner Jim Barry in 2015. The French-Mediterranean restaurant was awarded a Michelin star in the 2017 guide and Menu of the Year at the Cateys in the same year.
