The Gainsborough Bath Spa hotel restaurant has relaunched as ‘Dan Moon at the Gainsborough restaurant'.
When the 99-bedroom hotel was opened in July 2015 by YTL Hotels, Austrian consultant chef Johann Lafer launched the restaurant with an Asian fusion concept. However, since joining the hotel as head chef 18 months ago, Moon has quietly taken over the reins and established his own menu, and Lafer is no longer involved.
Moon, who is West Country born and bred, has made a name for himself in Bath. He was previously head chef at Hunstrete House (now the Pig near Bath) and was awarded three AA rosettes while he was at Homewood Park, as well as The Caterer's Acorn Award and the Bath Life Award for Restaurant of the Year. He then spent three years at Ston Easton Park before joining the Gainsborough.
He said: "When I first joined the Gainsborough restaurant, my focus was on creating new flavour combinations and giving dishes a depth of flavour that surprised and excited guests, and I never looked back."
Andrew Jordan, vice-president of YTL Hotels, added: "With the restaurant having launched from a standing start two years ago, our main challenge was to get the word out. What has definitely made a difference for us has been having the reputation, the skill and the enthusiasm of award-winning chef Dan Moon to drive us forwards.
"We are thrilled that Dan's partnership with the Gainsborough restaurant has proved so fruitful over the past months, and we are excited about the coming years, as Dan develops and expands his beautiful dishes and menus. We could think of no better way of declaring our appreciation than by incorporating Dan's name into the restaurant title."
